Today was our annual fire drill. Once a year our building gets evacuated and we all get to run through a firedrill. It's fun seeing all the people from the other companies in the building like our friends at Fiji Water, Teleflora, Firestation Agency and the folks from Roll International.

Back in June, POM provided refreshing post-game antioxidant recovery to a group of British soccer players here in the LA area. This past weekend, we were pleased to supply POM for another game involving the team from BAFTA/LA (British Academy of Film and Television Arts in Los Angeles www.baftala.org). BAFTA played the Princess Cruises team to a 2-2 tie. Looks like everyone appreciated the post-game antioxidant boost! Once again, thanks to Julian Stone www.tastyfilms.com for sharing POM with the players and providing the pictures.
After cooking with POM pomegranate juice for eight months now, one of the
things I’ve found is that it’s an excellent ingredient substitute for red wine,
especially the lighter varietals. It can give a similar wine-like sensation,
yet the fruitiness provides a freshness and brightness that’s hard to capture
in an aged red.
One of the tricks with cooking with red wine, especially reducing it, is
handling the astringency. Pomegranate juice shares this, and it’s something to
watch for. According to food scientist Harry McGee, tannins in food love to
bond to proteins (thus their name — tannins will “tan” animal hides by bonding
with perishable skin proteins). If there aren’t enough proteins in direct
contact with the tannins, they will bind with the proteins in saliva, causing
that sticky sensation after a glass of heavy red wine. The trick for a cook is
to provide some protein in the meal to lessen the astringency, so the meal has
a bit of the feel, without gumming up the mouth. This can be as simple as
adding some mustard when making a vinaigrette. It also explains the long
history of cooking red wine and beef together.
For August’s POM blogger recipe, I made a POM
pomegranate juice and balsamic vinegar marinade with beef, reduced the marinade
into a sauce, seared the beef with some blanched green beans, and served it all
in a Parmesan crisp “bowl”. A single bowl can be made as an appetizer, or
several as a meal.
Recipe: POM Pomegranate Steak in a Parmesan Crisp
1 cup POM 100% pomegranate juice
1 tablespoons balsamic vinegar
1 tablespoon dijon mustard
1 clove garlic, minced
10 oz tender beef, diced into 1/2 inch cubes
1/2 pound green beans
1/2 cup finely shredded Parmesan Reggiano
Take a look at the article in yesterdays LA Times about battling inflammation by eating the right foods.
"In general terms, following an anti-inflammatory diet means increasing intake of foods that have anti-inflammatory and antioxidant properties. (Antioxidants reduce the activity of tissue-damaging free radicals at sites of inflammation.) The diet includes vegetables, whole grains, nuts, oily fish, protein sources, spices such as ginger and turmeric and brightly colored fruits such as blueberries, cherries and pomegranates..." "Hi, my name is Pom -- really, no kidding!I wanted to share the attached photos with
you, including the one that my husband took of me several years ago standing in

Thank you Pom for sharing, send us your photos, especially if your name is Pom, we'd love to see how you POM.
Rise & Shine: Open your windows. Let the morning breeze cool you & let the sun light your room. Turn off the A/C & unplug your lamps.
Your Morning Zap: Skip the drive to the coffee shop. Brew your own organic coffee & enjoy it out of your own reusable cup.
Save Water: Take a Navy shower. Get wet. Turn off the water. Soap up. Rinse. Get out.
Reuse: Use the same towel to dry off all week. Less laundry, more water saved.
Grub Good: Eat healthy, local & organic. Fresh in-season fruits with organic cereal & milk will give you a feel good energy to tackle your day.
Avoid Emissions: Take the bike to school or work. If you sweat easily, bring an extra pair of shirt & some smell good for an immediate fix. If biking to work is not an option, carpool or take public transportation.
Just like any goal, living green takes planning & preparation. Prepare your meals, plan out your commute & source of transportation. Be conscious of your day. As time goes on, these practices become habit and ultimately becomes a rewarding lifestyle.

The cooking day is usually Saturday or Sunday. On the Wednesday before, the

ingredients like brown sugar, bacon, applesauce, and peanuts, and of course,
POM pomegranate juice was one of the ingredients in the hat. Over the July 4th
weekend, the pomegranate juice was plucked out of the hat and it was time for

POM Pomegranate Gnocchi with Pomegranate Chocolate Ganache
A couple years ago, Christey and I ate at Thomas Keller’s Bouchon restaurant at the Venetian in Las Vegas. It was the first (and so far only) Keller restaurant we have visited. I had Keller’s gnocchi parisienne, which is a different way of making them from the more common potato or semolina versions. This recipe alone was the reason I bought his Bouchon cookbook, and I’ve since been inspired by several recipes.
Gnocchi parisienne are savory, but made from the more traditionally sweet pâte à choux dough. For the savory version, mustard, cheese, and herbs are added.
For June’s POM Pomegranate recipe, I decided to try to take the pâte à choux gnocchi back toward a sweet direction, and made a dessert gnocci with POM 100% pomegranate juice, served with a pomegranate and chocolate ganache.
I was expecting these to turn out more red, and the color blended into the flour and butter more than I expected. It didn’t matter, as the little gnocchi nuggets were pretty tasty — a little caramel on the outside and soft on the inside. The ganache was fantastic, and we’ve since had it on ice cream. Several times.
1 cup AP flour
3/4 cup POM 100% pomegranate juice
6 tbsp butter
1/2 tsp salt
1/2 cup chocolate chips
1/4 cup POM 100% pomegranate juice
1/2 cup heavy cream
